Sauce is Boss

Allow us to get saucy for Pasta Month. With all the combinations, it’s easy to become overwhelmed with what pasta and sauce make the perfect pair. Lucky for you, Bravo’s very own Founding Chef Phil Yandolino is here to break it down.

Textured Pasta — Textured pasta, such as penne rigate or rigatoni, has ridges that harbor and absorb sauce. The Pasta Bravo with rigatoni, grilled chicken and mushrooms features a red pepper cream sauce that works well with the pasta, because of the cream-based sauce.

String Pasta — Because string pasta does not have the texture nor nooks that other pasta shapes have, it pairs well with creamy sauces that stick to the pasta. The Linguine Carbonara, made with white wine and cream, binds to the noodles and absorbs the flavor.

Shaped Pasta — Shaped pasta offers nooks and crannies, which are perfect places for sauce to reside. The Pasta Fra Diavolo has a spicy tomato cream sauce that gets stuck inside the campanelle, a trumpet-shaped pasta. The flavor of sauce is incorporated in every bite.

Filled Pasta — Filled pasta ingredients must pair well with the sauce. The Lobster Ravioli Alla Vodka, for example, needs a delicate scampi sauce to let the seafood flavors shine. Remember, the sauce can’t overpower the filling.

5 Things You Didn’t Know About Pasta


October is Pasta Month. What better time to educate you about the wonders of this simple yet delicious dish.

1. Pasta is old. Really old.

In Greek mythology, it is believed that the god Hephaestus invented a device that made strings of dough. There are also carvings on the Etruscan tombs showing the tools to make pasta that date back to 400 B.C. Talk about standing the test of time.


2. Pasta life hacks.

Having trouble lighting a candle? Use a dry spaghetti noodle. Need to cover a cake without ruining the frosting? Stick dry noodles upright in the cake and wrap plastic around the tips. Pasta is like MacGyver, wouldn’t you agree?

3. Pasta shapes are like snowflakes.

You have 60 seconds to name every type of pasta you know.


Time’s up! Did you get all 600 different shapes? According to the International Pasta Organization, there are over 600 different types of pasta.

4. Our forefathers had good taste.

Pasta was introduced to the United States by our third president, Thomas Jefferson. He also authored the Declaration of Independence, something you may have heard of.

5. Pasta is at our roots.

Allow us to get sappy for a moment. The history of Bravo Cucina Italiana can’t be told without including this Italian staple. We want to share that history with you as we celebrate Pasta Month.

Savory Summer Nights is more than just a name. It evokes memories, awakens taste buds and reminds us why enduring the harsh winter is always worth it. Three words that, when put together, describe our passion at Bravo perfectly.


There are many ways to describe the word “savory”. Some may say it’s the “opposite of sweet”. Others may claim that it means “full of delicious flavor and taste”. What we can all agree on, however, is that our menu provides an abundance of both. We’re looking at you, Crab Crusted Salmon.


It’s more than just the hottest season of the year. It has something for everyone. Summer is baseball games with your buddies, a spontaneous road trip to an unknown destination or even just a last minute dinner on the terrace. And just like summer, Bravo’s new Savory Summer Nights menu has something for everyone. Seafood lover? Try our Shrimp Scampi Pasta. Giving in to your sweet tooth? The new Cookie Butter Blondie mixes sweet and savory.


Summers are not complete without those famous, and sometimes legendary, summer nights. The ones that tie up a perfect day at the lake, with a bonfire near the water, or that neighborhood party down the street you look forward to every year. Now add a night on the patio at Bravo to that list and your summer is complete (our new Italian Mule is the perfect companion).

Recipe of the Month


If you don’t have a sweet tooth already, you will after this dessert. Our new Cookie Butter Blondie is the perfect combination of sweet and salty. Don’t live near a Bravo or can’t make it to the restaurant? You can still make this dish at home.

Yield: 12 blondies


1/4 cup unsalted butter, melted and slightly cooled

1/4 cup cookie butter, melted and slightly cooled

1 cup light brown sugar, packed

1 large egg, at room temperature

1 egg yolk, at room temperature

1 tsp vanilla extract

1/4 tsp cinnamon

1/4 tsp kosher salt

1 cup all-purpose flour

1/4 cup white chocolate chips (can substitute chocolate chips, butterscotch chips, nuts, etc.)


  1. Preheat oven to 350°F and line an 8-inch square baking pan with parchment paper. Combine melted butter, cookie butter, brown sugar, egg, egg yolk, vanilla, cinnamon and salt in a medium bowl. Whisk until smooth. Fold in flour just until incorporated, then fold in white chocolate chips. Scrape batter into prepared pan and use a piece of parchment paper lightly coated with nonstick spray to press evenly into pan. Note: the batter will be very thick.
  1. Bake for 20 minutes, until top is set, edges are golden, and a toothpick inserted in the center comes out clean or with a few crumbs attached. Cool completely in pan on a wire rack. Just before cutting, chill in the freezer for 10 minutes; the blondies are very gooey and this will help to cut them easier. Carefully lift parchment to remove bars from pan and place on a cutting board. Remove the parchment and cut 4 rows of 3 with a sharp knife yielding 12 squares.
  1. Serve blondies at room temperature or warm in the microwave for 20 seconds and serve with ice-cream. Store blondies in an airtight container for up to 3 days. (If they last that long!)

Wine pairings and Bravo dishes. Need we say more?

It’s official. Our new menu has been released which features 15 new menu items to choose from. We know what you’re thinking. “These are all delicious, but which wine goes best with my new favorite dish?” Not to worry, we’ve got you covered. Here are the top 3 pairings for our new menu (don’t fret, we didn’t forget dessert):

1. Starter: Ricotta & Ciabatta


Red wine: If you are really feeling red, you need to be careful not to overpower a young cheese with heavy tannins (what causes the dry puckering sensation in your mouth when you drink red wine). Remember the Ricotta is very young…we make it in house. That is why 19 Crimes is a good choice. This is a light-to-medium bodied, fruit forward, red blend of Shiraz, Pinot Noir, Grenache and Cabernet Sauvignon.

Fun Fact: 19 Crimes is so named because in the 1700’s there were 19 crimes a criminal could commit that would get them shipped from England to the then-penal colony of Australia. The man pictured on the label was an actual criminal that was deported, and on each cork they print one of the 19 crimes.

2. Pasta: Linguine Carbonara


Red wine: Let’s introduce the cream in our Carbonara to our old friend tannin in the form of the Rocco Chianti. Ah they get along splendidly. The cream works to mellow out the tannin and vice versa.

Fun Fact: Chianti Classico is named for where it is grown: Classico is one of the seven sub regions within Chianti. Chianti Classicos must be at least 80% Sangiovese and aged for 10 months.

3. Dessert: Cookie Butter Blondie (our personal favorite)


White wine: We highly recommend the Conundrum with the Cookie Butter Blondie. When pairing desserts with wine it is easy to overwhelm the taste buds with too much sweetness. This white blend has just a touch of sweet that is well balanced with an acidity. The acidity of the wine will pair well with both the mix of sweet and salty that you get from this dessert.

Fun Fact: Conundrum is so named because each year the winemaker uses a different blend of varietals (varietal=fancy name for type of grape). The winemaker never reveals the exact mix used, and each year wine gurus try to guess what is in it.
