It’s Pasta Month and we’re celebrating it with our ‘Share Our Love of Pasta” Prix Fixe menu. To determine the 3 dishes that were featured in the Prix Fixe, we held a special chef contest! All of our BRAVO! Executive Chefs were asked to submit a recipe that they created using Barilla Pasta, and the top 3 dishes were voted on by a tasting committee. Not only are the top 3 featured in our restaurants during Pasta Month, but the chef that sells the most dishes during this month will receive a trip to Italy, sponsored by Barilla and Porta Palo wines!
One of the talented chefs selected for this honor was Chef Luis Monge from BRAVO! Galleria at Sunset in Henderson, Nevada. His Pasta Month creation is the simple yet flavorful Seafood Pasta. We would like to introduce you to Chef Luis, so we asked him a few questions about his background and his inspiration for creating this amazing dish:

Q: What is you first memory of cooking?
A: “I remember as a kid always being in the kitchen with my great grandma & my mom when they were always cooking. I would always get 1st shots trying the food. Also remember licking the spoon clean when it came down to desserts. Can’t forget sticking my finger in the desserts when they had there backs turned. I know that was kind of bad but that’s what kids do.”
Q: What inspired you to get in the culinary field?
A: “I’ve been very fortunate to get to work with a lot of great Chefs here in Las Vegas which took the time to show me all their culinary expertise that made them great chefs. Also there were a lot of shows on the cooking network and great cook books as well.”
Q: What is your favorite dish to make?
A: “I really don’t have one but I love cooking holiday meals like Thanksgiving & Christmas because it gets the whole family together and that means the whole world to me to spend these few & precious moments among ourselves.”
Q: What’s your favorite part of working at BRAVO!?
A: “Working with a lot of great people who had the same mindset of achieving the overall satisfaction to our guest everyday!”
Q: Besides the opportunity to win a trip to Italy, what inspired you to create this dish?
A: “I’ve made this dish before that takes the flavor of a Cioppino but added more of a twist of the Bravo brand of ingredients.”
Q: Can you describe your entry dish?
A: “Barilla linguine, shrimp, bay scallops, calamari in a spicy tomato white wine sauce with rosemary, basil and green onions.”
Q: Is there anything else you’d like to share about yourself?
A: “My passions: 1) Making sure all our guest have a great dining experience.
2) Working together with my team to ensure all food dishes are made correctly and flavor profiles are spot-on. Finally, I just wanted to thank everyone involved for this opportunity and it is greatly appreciated.
